Roasted Cabbage with French Onion Balsamic Dressing

Ingredients:
1-2 Heads of Green Cabbage (red will also work), rinsed Dressing: 2 TBSP HOPE French Onion Cashew & Almond Dip 1 TBSP Balsamic Vinegar ½ Lemon, juiced ¼ C Olive Oil 1 TBSP Dijon Mustard ½ tsp of coconut sugar or agave Garnish with: Salt + Pepper, to taste Almonds, toasted & chopped Parsley
Directions:
Preheat oven to 400. Cut the cabbage head lengthwise from the steam getting 4-5 half in thick pieces per head. Set your cabbage on a lined baking sheet. Brush with olive oil on both sides and sprinkle with salt and pepper. Combine all ingredients in a jar to make the dressing. Shake the jar vigorously for about 30 seconds. Pour half of the dressing over the cabbage *save remaining to dress after it is baked. Bake in oven for 25 min or until golden, flipping the steaks midway through. * If you want a more charred cabbage turn your oven to broil and brown the top for an additional 2-3 min at the end
To serve, add roasted cabbage to a serving platter, sprinkle with chopped almonds, parsley, and additional salt and pepper + dressing to taste. Enjoy!
