Hope French Onion Cashew and Almond Dip
Assortment of Vegetables
We used—diced carrots, red peppers, golden beets, asparagus, broccoli and grape tomatoes

Fresh herbs— cilantro
- Clean and dice the veggies into bite sized pieces.
- In a cast iron or heavy bottomed pan, Add 1-2 tbsp of olive oil over medium heat , add vegetables and cook until tender (about 15-20 min).
- Once the vegetables are almost cooked through, in a separate pan, cook your egg to order your preferred way
- To serve— place the egg on top of the vegetables, season with salt and pepper to taste, garnish with fresh herbs, and a spoonful of Hope Garlic Cashew and Almond Dip!
