Veggie Skillet Breakfast Hash with Hope French Onion Cashew and Almond Dip

Ingredients:

Hope French Onion Cashew and Almond Dip
Assortment of Vegetables
We used—diced carrots, red peppers, golden beets, asparagus, broccoli and grape tomatoes
Salt + pepper
Egg
Fresh herbs— cilantro

Directions:

  1. Clean and dice the veggies into bite sized pieces.
  2. In a cast iron or heavy bottomed pan, Add 1-2 tbsp of olive oil over medium heat , add vegetables and cook until tender (about 15-20 min).
  3. Once the vegetables are almost cooked through, in a separate pan, cook your egg to order your preferred way
  4. To serve— place the egg on top of the vegetables, season with salt and pepper to taste, garnish with fresh herbs, and a spoonful of Hope Garlic Cashew and Almond Dip!
