Colorful vegetables
We used:
- Purple: purple potatoes, and red onions
- Green: Brussels sprouts
- Yellow: Acorn squash
- Orange: Carrots
- Red: Red bell pepper
Season with salt and pepper, dried herbs, olive oil, and balsamic vinegar
