Pancake Tacos
Ingredients:
- HOPE Chocolate Dessert Dip
- Pancakes *recipe follows
- Fruit of choice: we used diced strawberries, bananas, and blueberries
Topping Options:
- plant-based yogurt
- honey, or maple syrup
- cocoa nibs, or mini dairy-free chocolate chips
- toasted coconut
- nuts
Blender Pancakes:
- 1 ½ C rolled oats
- 2 bananas, ripened1/4 tsp cinnamon
- 1 C plant-based milk of choice
- 1 tbsp ground flax
- 1 tbsp baking powder
- 1 tsp pure vanilla extract
Directions:
Make the pancakes— Add all of the above pancake ingredients to a blender and blend until smooth. Thin the batter with additional plant-based milk if needed. The batter should be pourable but not too thin. Pour about 1/3 C of the batter onto a greased non-stick skillet over medium heat. Cook for about 1 min or until golden and flip. Cook for an additional 45 sec. Repeat with remaining batter.
