Fruit of choice: we used diced strawberries, bananas, and blueberries
Topping Options:
plant-based yogurt
honey, or maple syrup
cocoa nibs, or mini dairy-free chocolate chips
toasted coconut
nuts
Blender Pancakes:
1 ½ C rolled oats
2 bananas, ripened1/4 tsp cinnamon
1 C plant-based milk of choice
1 tbsp ground flax
1 tbsp baking powder
1 tsp pure vanilla extract
Directions:
Make the pancakes— Add all of the above pancake ingredients to a blender and blend until smooth. Thin the batter with additional plant-based milk if needed. The batter should be pourable but not too thin. Pour about 1/3 C of the batter onto a greased non-stick skillet over medium heat. Cook for about 1 min or until golden and flip. Cook for an additional 45 sec. Repeat with the remaining batter.
Make Pancake Tacos—spread a generous dollop of HOPE Chocolate Dessert Dip onto each pancake, top with desired toppings. Repeat with remaining tacos and fillings. YUM!!
