Pancake Tacos

Ingredients:

  • HOPE Chocolate Dessert Dip
  • Pancakes *recipe follows
  • Fruit of choice: we used diced strawberries, bananas, and blueberries

Topping Options:

  • plant-based yogurt
  • honey, or maple syrup
  • cocoa nibs, or mini dairy-free chocolate chips
  • toasted coconut
  • nuts

Blender Pancakes:

  • 1 ½ C rolled oats
  • 2 bananas, ripened1/4 tsp cinnamon
  • 1 C plant-based milk of choice
  • 1 tbsp ground flax
  • 1 tbsp baking powder
  • 1 tsp pure vanilla extract

Directions:

  1. Make the pancakes— Add all of the above pancake ingredients to a blender and blend until smooth. Thin the batter with additional plant-based milk if needed. The batter should be pourable but not too thin. Pour about 1/3 C of the batter onto a greased non-stick skillet over medium heat. Cook for about 1 min or until golden and flip. Cook for an additional 45 sec. Repeat with the remaining batter.

  2. Make Pancake Tacos—spread a generous dollop of HOPE Chocolate Dessert Dip onto each pancake, top with desired toppings. Repeat with remaining tacos and fillings. YUM!!
