Red Pepper Roasted Carrots

1 lb carrots
3 tbsp Red Pepper Hope Hummus
2 tbsp evoo
1 tbsp raw maple syrup
salt and pepper to taste
3 tbsp pomegranate arils


  1. Preheat the oven to 400°F. Line a sheet pan with foil and coat with olive oil spray. Place the carrots in a single layer on the baking pan.
  2. In a small bowl, mix together the sriracha hummus, olive oil, maple syrup, salt and pepper. Pour the mixture over the carrots and toss to coat.
  3. Place in the oven and roast for 30-40 minutes or until carrots are tender and browned. Remove from oven and garnish with pomegranate arils to serve.
