Stuffed Acorn Squash

Ingredients:

3 small acorn squash, seeded and cut into 1/2-inch slices
1/4 cup Red Pepper Hope Hummus
1/2 cup quinoa
2 tbsp evoo
1 red onion, diced
1 apple, chopped
2 tbsp chopped sage
2 tbsp chopped walnuts
3 tbsp aquafaba
salt + pepper to taste
extra virgin olive oil spray

Directions:

  1. Preheat oven to 375°F. Spray baking sheet with cooking spray or oil and place squash rings on sheet.
  2. Cook quinoa according to package and let cool.
  3. Heat evoo in a skillet over medium heat and cook onion until it begins to brown (about 8-10 minutes). Add chopped apple and cook for 3-5 minutes more, until apple is softened.
  4. Combine quinoa with apple and onion mixture, sage, walnuts, hummus and aquafaba in a large bowl. Stuff filling into the center of each squash ring. Spray with oil and bake for 40 minutes, or until the tops are golden brown.
