Spicy Veggie Savory Oats

1 cup gluten-free oats
2 cups water
3 tbsp Jalapeno Cilantro Hope Hummus
1 tbsp evoo
2 eggs, poached
1 avocado, sliced
1/2 cup spinach
1/4 cup chopped onion
1/4 cup chopped bell pepper
sea salt + black pepper to taste


  1. Bring water to boil in medium saucepan. Add oats and simmer on medium heat until fully cooked, about 4-5 minutes. Remove from heat and stir in hummus.
  2. In a large pan, add evoo and diced veggies, sautéing until soft. Remove from heat and mix in spinach to wilt.
  3. Poach or fry eggs while you are sautéing veggies.
  4. Top cooked oats with sautéed veggies, eggs and avocado slices. Season with salt and pepper. Serve warm any time of day!
