Spicy Veggie Savory Oats

Yield: 2 servings
1 cup gluten-free oats
2 cups water
3 tbsp Jalapeno Cilantro Hope Hummus
1 tbsp evoo
2 eggs, poached
1 avocado, sliced
1/2 cup spinach
1/4 cup chopped onion
1/4 cup chopped bell pepper
sea salt + black pepper to taste
- Bring water to boil in medium saucepan. Add oats and simmer on medium heat until fully cooked, about 4-5 minutes. Remove from heat and stir in hummus.
- In a large pan, add evoo and diced veggies, sautéing until soft. Remove from heat and mix in spinach to wilt.
- Poach or fry eggs while you are sautéing veggies.
- Top cooked oats with sautéed veggies, eggs and avocado slices. Season with salt and pepper. Serve warm any time of day!
