Mediterranean Flatbread Pizza

4 pitas
1/2 cucumber, chopped
1/2 tomato, chopped
1/4 cup pitted Kalamata olives, chopped
1/4 red onion, diced
1 cup baby arugula
2 tbsps lemon juice
3-5 tbsps EVOO
8 tbsps of Original HOPE hummus
salt and pepper, to taste
feta cheese, as desired


  1. Preheat the oven to 400 degrees
  2. Brush pitas with EVOO and bake for 5 minutes, or until crisp
  3. In a medium bowl, toss cucumber, tomato, Kalamata olives, red onion, baby arugula, lemon juice, EVOO and salt and pepper
  4. Spread each pita with 2 tbsps of HOPE hummus and divide the toppings
  5. Sprinkle feta cheese
  6. Enjoy!
