Crunchy + Creamy Green Beans

12oz green beans
3-4 shallots, thinly sliced
1 tbsp evoo
1 tbsp balsamic vinegar
salt and pepper to taste

For the herb sauce:
1/4 cup Original Recipe Hope Hummus
1/4 cup tahini
3 tbsp lemon juice
3 garlic cloves
almond milk to thin


  1. Saute shallots in evoo on medium-high heat until translucent. Add balsamic vinegar and saute for 2-3 more minutes, until browned and crispy. Remove from heat.
  2. Blend all sauce ingredients until smooth. Add almond milk as needed to thin.
  3. Steam green beans and drizzle with herb sauce. Garnish with crispy onions and serve!
