1 small beet 1 sweet potato 1 cup broccoli 2 cups of mixed greens ½ avocado 1 tsp hemp seeds 1 tbs avocado oil sea salt & black pepper lemon Black Garlic Hummus
Directions:
Preheat oven to 400.
Peel and cut the beet, and sweet potato. Combine the vegetables into a bowl, and toss with avocado oil, sea salt, and black pepper.
Layer the vegetables onto a pan, and roast for about 25-30 minutes, flipping half-way. Remove broccoli after 15 minutes to avoid burning them.
Add mixed greens to a bowl. Add lemon, and optional, olive oil. Toss. Once the vegetables are done, remove from oven, add to mixed greens. Layer on the avocado, sprinkle of hemp seeds, and add HOPE.
