Roasted Vegetable Salad with Black Garlic Hummus

Ingredients:

1 small beet
1 sweet potato
1 cup broccoli
2 cups of mixed greens
½ avocado
1 tsp hemp seeds
1 tbs avocado oil
sea salt & black pepper
lemon
Black Garlic Hummus

Directions:

  1. Preheat oven to 400.
  2. Peel and cut the beet, and sweet potato. Combine the vegetables into a bowl, and toss with avocado oil, sea salt, and black pepper.
  3. Layer the vegetables onto a pan, and roast for about 25-30 minutes, flipping half-way. Remove broccoli after 15 minutes to avoid burning them.
  4. Add mixed greens to a bowl. Add lemon, and optional, olive oil. Toss. Once the vegetables are done, remove from oven, add to mixed greens. Layer on the avocado, sprinkle of hemp seeds, and add HOPE.
  5. Enjoy!
