Roasted Beet + Goat Cheese Savory Oats

Yield: 2-3 servings
1 cup gluten-free oats
2 cups water
3 tbsp Original Recipe Hope Hummus
2-3 medium roasted beets
1/2 cup arugula
1 tbsp fresh basil, chopped
2 tbsp crumbled goat (or almond) cheese
sea salt + black pepper to taste
- Add the water, hummus and beets to a blender and puree until smooth. Pour mixture into saucepan.
- Add oats to the beet mixture and stir until fully cooked, about 5-6 minutes.
- Garnish oats with arugula, basil, and cheese. Serve warm any time of day!
