Chicken Gyro

Plan for: 2 hours, 30 minutes

8 chicken tenders
2 T olive oil
3 garlic cloves, minced
½ tsp cinnamon
½ tsp nutmeg
½ tsp ground cardamom
½ tsp paprika

1 cucumber, diced
1 tomato, diced
1 T Red wine vinegar
½ tsp oregano

1 package of pita
Salt and pepper
Hope Original hummus
Red onion, sliced
Feta cheese

Want to make it vegetarian? Swap chicken for falafel!


  1. Combine oil, garlic, cinnamon, nutmeg, ground cardamom and paprika, salt and pepper. Place into a covered dish or bag and let marinate for 2 hours or up to overnight.
  2. Dice cucumber and tomato. Toss in red wine vinegar and add oregano and salt and pepper to taste. Chill in refrigerator until ready to use.
  3. When chicken is ready, grill or prepare on stovetop.
  4. To assemble gyro, take a warmed pita and spread on Hope Original hummus. Add the cucumber tomato salad, grilled chicken, sliced onions and feta cheese. Enjoy!
