Mini Falafel Waffles with Tabbouleh Salad

Yield: Makes 8-10 mini waffles

Ingredients:

For the Falafel:
¾ C chickpeas, drained and rinsed
¼ C HOPE Original Hummus
1 lg shallot (or ½ red onion)
2 cloves of garlic, minced
1 tsp baking powder
2 TBSP corn starch
2 TBSP chickpea flour *all purpose will also work
2 TBSP fresh parsley
2 TBSP fresh cilantro
Spices: ½ tsp of paprika, cumin, salt, pepper + 1/8 tsp of cayenne pepper

For the Tabbouleh Salad:
1 C cherry tomatoes, cut in half or quartered
1 C Persian cucumber, cut into quarters
¼ C red onion, diced
¼ C fresh mint, chopped
¼ C fresh parsley, chopped
Salt + Pepper, to taste
Lemon Juice, to taste

For serving additional Hope Original Hummus

Directions:

  1. For the Falafel Waffles– In a food processor, add chickpeas, hummus, shallot, garlic, fresh herbs and spices. Pulse until combined. In a separate bowl mix together dry ingredients: baking powder, corn starch and flour. Wisk to incorporate. Add the dry ingredients to the food processor. Pulse until just combined, don’t over mix.
  2. Using a mini waffle maker, spray with non-stick cooking spray and cook until golden according to the manufactured instructions.
  3. For the tabbouleh—combine all ingredients into a bowl and season to taste
  4. To serve: smear HOPE Hummus on top of the falafel waffles and top with tabbouleh salad, or alternatively, make a salad using tabbouleh and mixed greens, garnish with additional HOPE hummus and mini falafel waffles! YUM!
