Mango Shrimp Curry Stuffed Avocados

Yield: 4 servings
1 8oz Tub Hope Coconut Curry Hummus
2 Avocados, cut in half, pitted, for 4 total servings
1 C Shrimp, cooked, chopped into pieces
1-1/2 (depending on spice preference) jalapeno, seeds removed, diced
½ C Cherry tomatoes, halved or quartered
1 Mango, chopped
½ C red onions, chopped
Lime Juice, to taste
Salt + Pepper, to taste
- Add cooked shrimp, jalapeno, tomatoes, mango, red onions, lime, and salt + pepper to a bowl. Stir to combine.
- To serve, place 4 halved avocadoes on a platter. Add a scoop of Hope Coconut Curry Hummus to the avocado pit. Next add a scoop of the shrimp mixture. Top with another scoop of hummus + garnish with fresh cilantro! Enjoy!
