Ingredients:

1 onion, diced
3 cloves garlic, minced
6 cups low sodium vegetable broth
1- 15 ounce can organic crushed tomatoes
1/2 cup prepared pesto
2 tbsp EVOO
fresh basil
mini sweet pepper rings, sliced
1-8oz Red Pepper HOPE hummus

Directions:

  1. Heat oil in a heavy stockpot over medium high heat. Add onion and saute for about 4-5 minutes until golden brown. Add garlic and sauté for another minute.
  2. Add crushed tomatoes, broth, pesto, and HOPE hummus to the pot, and stir well to combine. Bring soup to a boil, and then reduce heat to low, cover and let simmer for 15 minutes.
  3. Spoon into bowls or cups, and if desired, garnish with mini sweet pepper rings and fresh basil.
  4. Enjoy!
