1 onion, diced 3 cloves garlic, minced 6 cups low sodium vegetable broth 1- 15 ounce can organic crushed tomatoes 1/2 cup prepared pesto 2 tbsp EVOO fresh basil mini sweet pepper rings, sliced 1-8oz Red Pepper HOPE hummus
Directions:
Heat oil in a heavy stockpot over medium high heat. Add onion and saute for about 4-5 minutes until golden brown. Add garlic and sauté for another minute.
Add crushed tomatoes, broth, pesto, and HOPE hummus to the pot, and stir well to combine. Bring soup to a boil, and then reduce heat to low, cover and let simmer for 15 minutes.
Spoon into bowls or cups, and if desired, garnish with mini sweet pepper rings and fresh basil.
