Grilled Veggie Hummus Pizza

Yield: 2 servings
1 8oz tub of Hope Red Pepper Hummus
1 Pre-baked Pizza Crust
Zucchini, cut into ¼ in slices
Red Onion, roughly chopped
Goat Cheese or Feta Cheese, crumbles
Heirloom cherry tomatoes, halved
Toppings: fresh basil, red pepper flakes
- Season zucchini, red onion and corn with salt and pepper and olive oil. Grill these veggies (zucchini, red onion and corn) covered, over medium heat for 8-10 min or until cooked through, turning halfway. Remove and set aside. (remove corn kernels from the cob once cooled slightly)
- Brush pizza crust on both sides with olive oil. Grill, covered, 1-2 min per side or until warmed through and grill marks form.
- Build your pizza— spread hummus on grilled pizza crust, Sprinkle with grilled veggies, halved tomatoes, and goat cheese. Top with fresh basil and red pepper flakes. Cut into slices and serve.
