Shredded BBQ Beet Sandwich with Cashew Cheese

Ingredients:

CASHEW CHEESE:
1/2 cup Red Pepper Hope Hummus
1 cup raw cashews
1/2 cup water
2 tbsp evoo
1 tsp cayenne
1/4 onion, chopped
1 clove garlic
1/4 cup nutritional yeast
salt + pepper to taste

SANDWICH:
Love Beets Smoky BBQ Shredded Beets
Buns
Cilantro
Tomato
Onion
Yellow Pepper
Avocado

Directions:

  1. Blend cashew cheese ingredients until smooth and creamy.
  2. Load up toasted buns with shredded beets, toppings and cashew cheese!
