Jalapeño Cilantro Quinoa Fiesta Bean Salad

2 C Quinoa, cooked
1 Can Black Beans, rinsed
1 Red Bell Pepper, diced
1 Yellow Bell Pepper, diced
1 Jalapeno, diced
1 lg Avocado, diced
½ Red Onion, finely chopped


2-4 TBSP HOPE Jalapeño Cilantro Hummus
1-2 Limes, juiced (to taste)

Garnish: with fresh cilantro


  1. Cook the quinoa as directed.
  2. Chop all vegetables, and rinse beans.
  3. Make the dressing—in a jar, whisk together HOPE Jalapeño Cilantro Hummus and lime juice until combined.
  4. In a large bowl, add the quinoa and chopped veggies. When ready to serve—pour the dressing onto the salad and toss ingredients together to combine.
