Chicken Gyro
Ingredients:
8 chicken tenders
2 T olive oil
3 garlic cloves, minced
½ tsp cinnamon
½ tsp nutmeg
½ tsp ground cardamom
½ tsp paprika
1 cucumber, diced
1 tomato, diced
1 T Red wine vinegar
½ tsp oregano
1 package of pita
Salt and pepper
Hope Original hummus
Red onion, sliced
Feta cheese
Want to make it vegetarian? Swap chicken for falafel!
Directions:
- Combine oil, garlic, cinnamon, nutmeg, ground cardamom and paprika, salt and pepper. Place into a covered dish or bag and let marinate for 2 hours or up to overnight.
- Dice cucumber and tomato. Toss in red wine vinegar and add oregano and salt and pepper to taste. Chill in refrigerator until ready to use.
- When chicken is ready, grill or prepare on stovetop.
- To assemble gyro, take a warmed pita and spread on Hope Original hummus. Add the cucumber tomato salad, grilled chicken, sliced onions and feta cheese. Enjoy!
