Vegan Queso Nachos

1/2 cup Red Pepper Hope Hummus
1 cup raw cashews
1/2 cup water
2 tbsp evoo
1 tsp cayenne
1/4 onion, chopped
1 clove garlic
1/4 cup nutritional yeast
salt + pepper to taste

1 bag black bean chips
1/2 can black beans, drained and rinsed
1/2 cup cilantro, chopped
1 avocado, chopped
1 tomato, chopped
1/4 onion, sliced
5 radish, sliced thinly


  1. Blend queso ingredients until smooth and creamy.
  2. Load up chips with toppings and queso! Optional: bake for 10 min at 350°F.
