Sea Salt & Olive Oil Pasta Salad

Hummus Dressing:

1/3 C Hope Sea Salt & Olive Oil Hummus
1 Tbsp Extra Virgin Olive Oil
½-1 lemon, juiced
salt and pepper to taste & water for thinning (optional)

Pasta Salad:

1 lb. Pasta, cooked and cooled
1 C Heirloom cherry tomatoes, halved
1 C Avocado, diced
1 C Cucumber, thinly sliced and halved
½ C Corn

Toppings: fresh basil, salt + pepper, parmesan cheese, thinly sliced red onion


  1. Cook pasta as directed and allow to cool
  2. In a large bowl combine—pasta, tomatoes, avocado, cucumber, and corn
  3. Combine ingredients to make hummus dressing, pour the dressing into the large bowl of pasta and veggies and mix thoroughly.
  4. Top with fresh basil, salt and pepper to taste, parmesan cheese and thinly sliced red onion. Serve and enjoy!
