Sea Salt & Olive Oil Pasta Salad
1/3 C Hope Sea Salt & Olive Oil Hummus
1 Tbsp Extra Virgin Olive Oil
½-1 lemon, juiced
salt and pepper to taste & water for thinning (optional)
1 lb. Pasta, cooked and cooled
1 C Heirloom cherry tomatoes, halved
1 C Avocado, diced
1 C Cucumber, thinly sliced and halved
½ C Corn
Toppings: fresh basil, salt + pepper, parmesan cheese, thinly sliced red onion
- Cook pasta as directed and allow to cool
- In a large bowl combine—pasta, tomatoes, avocado, cucumber, and corn
- Combine ingredients to make hummus dressing, pour the dressing into the large bowl of pasta and veggies and mix thoroughly.
- Top with fresh basil, salt and pepper to taste, parmesan cheese and thinly sliced red onion. Serve and enjoy!
