Roasted Garlic Roasted Cauliflower Lettuce Tacos

Ingredients:

1 Head Butter Lettuce
1 Head Cauliflower, cut into florets
1 tbsp Olive Oil
1 tsp Garlic Powder
1 tsp Cumin
1 tsp Paprika
Salt + Pepper, to taste

Sauce: Hope Roasted Garlic Cashew & Almond Dip (pro tip: add the juice of a lime to thin it out and drizzle on tacos!)

Toppings:
Sliced Avocado
Fresh Cilantro, chopped
Grape Tomatoes, halved
Radishes, sliced thin
Red Cabbage, sliced thin

Directions:

  1. Preheat oven to 400 degrees.
  2. Season the cauliflower florets with olive oil, garlic powder, cumin, paprika, salt and pepper. Toss to combine. Pour mixture onto a lined baking sheet in an even layer.
  3. Place the cauliflower in the oven and bake for 20-25 min or until slightly browned and crispy.
  4. To assemble tacos: Fill a lettuce cup with a few roasted cauliflower florets, top with desired toppings and drizzle with Hope Roasted Garlic Cashew & Almond Dip. Repeat and serve!
