One-pan Mexican Quinoa

1 cup cooked quinoa
¾ cup black beans, drained and rinsed
½ cup corn
½ red bell pepper, chopped
1/3 cup cilantro, chopped
1-2 tsp. taco seasoning
½ tbs. avocado oil
lemon juice
Spicy Avocado Hummus


  1. Cook quinoa according to package.
  2. Next, heat ½ tbs. of avocado oil in a pan, and toss in chopped red bell pepper, cook for a few minutes until softened. Add corn, black beans, and quinoa. Stir mixture together.
  3. Add taco seasoning, and lemon juice. Toss in cilantro, and enjoy with Spicy Avocado Hummus.
