Mason Jar Raw Rainbow Thai Curry Hummus Slaw

Hope Thai Coconut Curry
Red Cabbage, sliced thin
Carrot, grated with a peeler
Cucumber, cut into thin strips
Red Pepper, cut into thin strips
Cilantro, garnish
Cashew, garnish

1 tbsp. Soy sauce
2 tbsp. Sesame oil
Lime, juiced
1 tsp. fresh ginger, finely diced (optional)


  1. Wash and prep your veggies—thinly chop red cabbage, red pepper, and cucumber, peel the carrot & chop cilantro
  2. Prepare the dressing— in a small bowl add the juice of one lime, 2 tbsp sesame oil, and one tbsp soy sauce, and 1 tsp freshly grated ginger (optional), whisk until incorporated.
  3. Using a mason jar as your vessel, build your slaw– layer ingredients one by one starting first with the dressing, next red cabbage, then cucumber, next Hope Thai Coconut Curry Hummus, then add the remaining veggies and top with chopped cilantro and cashews
  4. Once you are ready to eat, shake the jar to distribute the dressing, unscrew and enjoy either in the jar or in separate a bowl. DELICIOUS!
