Loaded Sweet Potato Tots Skewers

Ingredients:

CASHEW QUESO:
1/2 cup Red Pepper Hope Hummus
1 cup raw cashews
1/2 cup water
2 tbsp evoo
2 tsp cayenne
1/4 onion, chopped
1 clove garlic
1/4 cup nutritional yeast
salt + pepper to taste

TOTS:
1 bag frozen sweet potato tater tots
pico de gallo
plain greek yogurt
chives

Directions:

  1. Blend cashew cheese ingredients until smooth and creamy.
  2. Bake tots according to directions on bag.
  3. Skewer baked tots and load up with cashew queso and toppings!
