Elote Hummus Dip

Ingredients:

1 package Hope Original hummus
1 sweet corn cob, grilled
½ tbsp olive oil
2 tbsp Cotija cheese, crumbled
¼ tsp Paprika
1 lime
cilantro
salt and pepper, to taste
grilled pita

Directions:

  1. Grill sweet corn until slightly charred. Let cool, then cut off the cob.
  2. Place hummus in a bowl. Drizzle with olive oil and top with corn, cotija cheese, paprika and salt and pepper to taste.
  3. Finish with a squeeze of fresh lime juice, a sprig of cilantro and serve with warm pita slices. Enjoy!
