Kale & Lemon Hummus Toast

3 tsp EVOO
1 tsp garlic
4 cup kale, chopped
1 cup grape tomatoes
2 eggs
Lemon Peppercorn HOPE Hummus
bread, toasted
chili Pepper Flakes
crushed red pepper
salt & pepper


  1. Heat 2 tsp EVOO and garlic in a skillet on medium.
  2. Add kale and grape tomatoes to skillet, warming slightly until they begin to soften. Season with salt and pepper to taste.
  3. In another skillet, heat 1 tsp EVOO over medium and add eggs. Cook to set for about 1 minute, then cover, remove from heat and let set for another 3-4 minutes.
  4. Spread Lemon Peppercorn Hummus on toasted bread and top with kale, tomatoes and egg.
  5. Season with crushed red pepper, salt and pepper to taste. Serve immediately.
