Cauliflower Fried Rice with Spicy Sriracha Sauce

1 ½ cups cauliflower rice
1 ½ cups mixed stir-fry veggies
1 tsp sesame oil
1 egg
¼ cup Sriracha Hope Hummus
1-2 tbs. water or coconut milk
2 tbs. chopped cilantro
optional: sesame seeds


  1. Heat oil in a pan.
  2. Next toss in cauliflower rice, and veggies. Stir together and allow mixture to cook for a few minutes. In a small bowl, crack open the egg, and mix.
  3. Add the egg into the mixture and allow it to scramble. In another bowl, add about hummus and water or coconut milk, combine. Add hummus mixture to veggies, and then serve in a bowl.
  4. Top with cilantro and sesame seeds.
  5. Serve and enjoy!
