A Vegan Thanksgiving Menu

It’s almost Thanksgiving! How did that happen?! Do you have big plans? Have you made your menu yet?? Don’t freak out, I put together 5 of my favorite (and easy!) vegan Thanksgiving recipes that will satisfy even the pickiest eaters. And I promise none of it involves tofurkey.

My favorite recipe this year is this roasted root veggie salad. It comes together easily and quickly so you can focus on spending time with your guests! I used a bed of shredded brussels sprouts, radicchio and kale, and topped with butternut squash, red onion, radishes and chioggia beets roasted in a red pepper maple glaze. What I love about this salad is that you can use any combination of root veggies! Sweet potatoes or fennel would be great substitutions. To top it all off, I added candied pecans, dried cranberries and almond milk ricotta. The flavors are just so autumnal and warm and perfect!

Stuffed acorn squash rings are a great entree for vegans and vegetarians. And they make a damn good side for our turkey lovers! I stuffed ours with a quinoa, apple, walnut and red pepper hummus mixture that pairs perfectly with the sweetness of the roasted squash.

Mashed potatoes are an important part of Thanksgiving. And you can’t have mashed potatoes without gravy! The best part about this vegan mushroom gravy is that it can be made in advance and reheated on the day of. Which also means that you can bring it with you if you’re going to someone else’s house for dinner! Your fellow guests will love you, and probably steal your gravy.

These sriracha roasted carrots are one of my favorite go-to side dishes for any meal. They’re simply tossed and roasted in a glaze of sriracha hummus, evoo and maple syrup, and topped with pomegranate arils. You’ll love their sweet and spicy flavor!

Crush the classics with my fresh take on the green bean casserole. I hate the mushiness and heaviness that comes with the traditional dish so I swapped in steamed green beans, a vegan herb sauce and crunchy balsamic onions for a lighter and crunchier version. It’s so good, you’ll be hoping for leftovers!
