VEGAN + GLUTEN-FREE SRIRACHA MAC ’N’ CHEESE
This recipe is simple and deeelish—your family and friends will have absolutely no idea it’s vegan OR gluten-free. And the best part is that the whole dish comes together in only 20 minutes!
I’ve been eating mostly gluten-free lately, so these Banza chickpea shells were perfect for this recipe. They don’t get gummy or fall apart, and taste just like wheat shells!
The sauce is a blend of cashews and Sriracha Hummus for a little kick. If you aren’t looking to make it spicy, you can sub with Red Pepper Hummus! The “cheesy” flavor comes from the nutritional yeast and almond milk. The result? Mac ’n’ cheese perfection.
I hope you guys love this dish! It’s totally creamy, cheesy, satisfying and comforting. Make this for an easy weeknight meal or when you want to impress friends with an incredible vegan + gluten-free pasta! I’ve also made this with sautéed kale or spinach instead of broccoli, which boosts the nutritional benefits and sneaks in more greens!
